Experience boutique and rare wines as Matthew-Lorèn guides you through the flight with an intimate, table-side presentation. Personally educating on the country of origin, and regional history, understanding wine structure, and a comparative analysis between the various wines.

GEORGES PAUCHON | SAUVIGNON BLANC SANCERRE
Sancerre is known for its flinty, savory Sauvignon Blanc from the Loire Valley of France.
The region’s rolling limestone hills and semi-continental climate deliver richly textured Sauvignon Blanc wines with ripe gooseberry aromas, bracing acidity, and flinty-smoke flavors.
This estate produces a limited production, hand-crafted wines that reflect a classic style of Sancerre that’s bright, fresh, expressive, and mineral-rich.
Aromas include tart stone fruit and fresh herbs, while the palate has flavors of; honeydew melon, white peach, flint, straw, gray salt, smoke, shortbread, lemon curd, and a creamy brioche quality, with a zippy finish.
This Sauvignon Blanc boasts refreshing acidity that will have you reaching for a second and third glass!

CHABLIS
4 REASONS TO TRY CHABLIS
1). You love Chardonnay. Particularly unoaked Chardonnay. Racy, light and tactile, yet uniquely complex.
2). You hate Chardonnay. Perhaps you’ve never loved Chardonnay, I get it, it wasn’t my favorite either until I had Chablis. This is the purest form of Chardonnay without any influence of oak or that heavy “buttery” flavors we are so used to. If I can be converted, so can you.
3). You love seafood. Chablis is famous for its Kimmeridgian limestone soil which is composed of fossilized oyster shells, the clearest sign of Chablis’ former life as a seabed. This unique soil heavily influences the wine and which is why it pairs so well with shellfish, crab, lobster, fish, oysters, clams, and scallops.
4) You’ve said, “I don’t like white wine” ever in your life. I rarely evangelize about wine. But I will certainly make an exception with Chablis. Its unique character and mouth-watering salinity will make even the fondest red wine lover take a second look at white wines- especially Chablis.

There are dry rosés and sweet rosés, pale rosés and dark rosés, party rosés and fine dining rosés. Of all the rosés made in the world, rosés from Provence in the south of France are renowned for being delicate, fresh, fruity, and generous.
An evocative pomelo pink color with intense fruit-forward flavors of strawberry, cherries, redcurrant, and licorice.
This romantic rose is very aromatic and shows off its strong character in the glass.

WHITE BURGUNDY BURGUNDY
This powerful French Chardonnay boasts hundreds of years of experience the Burgundians have with oak aging: well-integrated, subtle flavors of toasted almond, baked bread, dill, and vanilla that balances the fresh fruitiness flavors of green apple, yellow plum, and Meyer lemon.
This wine is a great contrast to the Chablis served at the beginning of the evening. This wine shows how beautifully complex and versatile the Chardonnay grape can be - even from the same region.

As a sommelier, I'm often asked: "what is your favorite wine?" It's an exceedingly difficult question to answer however, if I could only drink one wine for eternity it would be Burgundy.
The Côte de Beaune is the Beverly Hills of Burgundy production and is home to some of the most expensive vineyard land on Earth. Burgundian wines are some of the most collectible and rare wines in the world.
Powerful and rich, with complex fruit flavors of cranberry, cherry, raspberry, and notes of vanilla, clove, licorice, mushroom, wet leaves, tobacco, cola, caramel earth, and minerals.
Despite their complexity, these Pinot Noirs are extremely approachable and food-friendly. Tonight is your you'll have the chance to pair this exceptional pinot noir with some of the best world cuisines Las Vegas has to offer. A perfect match.

WE HAVE ANSWERS.
DO I HAVE TO RSVP?
YES! When you RSVP, we are anxiously awaiting you! Your RSVP gives our restaurant partners a heads-up on how to arrange the room, how many VIP bags we need to make, how much wine/ food to prepare, and if we need to close RSVP's.
DO I HAVE TO STAY THE WHOLE TIME?
No, the event is from 6pm-9pm or 6pm-10pm depending on the venue. Please arrive promptly at the time you have RSVP'ed, and stay as long or as little as you like. Most people stay well past their dinner reservation and mix/mingle.
WHAT'S THE COST
Great question! The event is FREE to RSVP. All food and wine can be purchased a la carte. There is no minimum food/drink spend required, so feel free to eat/drink at your budget. We offer the wines by the glass and by the flight (typically 4-5 wines), additionally, the chef-prepared food pairings can be purchased ala carte as well. Don't like the chef pairings? The full restaurant menu is available.
WILL THERE BE FOOD?
Yes, the chef and I have prepared small bites that are paired with each wine. These can be purchased a la carte. The full food menu is also available including vegan selections. Please notify your server of any food allergies/ requests.
WHAT IS THE EVENT FORMAT?
The Sommelier Series is meant to be a casual social wine tasting.
Come during your scheduled RSVP time. Your wine/ dinner service can last as little as 60 minutes or as long as the whole event. The event is structured for you to meet and network with other wine lovers and expand your personal and professional network.
6:00pm - Service starts - (red carpet photos, guests arrive)
745-8:00pm - Group photo on the Red Carpet
9:00pm OR 10:0opm- Event ends (guests welcome to stay and continue drinking/eating)
Prize Drawings - Every 30 min depending on # of prizes
*NOTE: this is just a rough format, not all events will follow this schedule.
SEATING ARRANGEMENTS
We have group/ communal tables reserved for us since many people come solo. This is a great way to meet other wine lovers and make new friends. Please tell the host you would like to sit at the Sommelier Series group table. I promise you'll leave with a few new friends!
Feel free to get separate checks. The venue is prepared to accommodate.
I will visit your table privately and go over the wines with you.
